做法:春笋切成片后(hòu )加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍收(shōu )汁(zhī )时(shí )盖上锅盖焖。
