做(zuò )法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝(háo )油翻(fān )炒均匀,加入(rù )少量清水半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
