做法:春笋切成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左(zuǒ )右(yòu )。再(zài )加入生抽(chōu )、老抽(chōu )、蚝油翻炒均匀(yún ),加(jiā )入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖(gài )焖。
