做法:春笋切(qiē )成片后加少许盐捞(lāo )出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清(qīng )水半掩住(zhù )春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
