做法(fǎ ):春(chūn )笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬(áo )干的时候(hòu )加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
