做法:春笋(sǔn )切成(chéng )片后加少许(xǔ )盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少(shǎo )量清水半掩住春笋,盖(gài )上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
