做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放(fàng )入生姜、春笋、牛(niú )肉(ròu )片、葱段(duàn )翻(fān )炒1分(fèn )钟左右。再加入(rù )生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅(guō )盖(gài )焖。
