做法:春笋切(qiē )成片后加(jiā )少许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半(bàn )掩住春笋(sǔn ),盖上锅盖(gài )大(dà )火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
