做法(fǎ ):春笋切成片后加少许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒(chǎo )1分钟左右。再(zài )加(jiā )入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
