做法:春笋切成片后(hòu )加(jiā )少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅(guō )盖大火煮开后(hòu )转中火。煮到水快(kuài )熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
