做法:春笋(sǔn )切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再加入(rù )生抽、老(lǎo )抽(chōu )、蚝油翻(fān )炒均匀,加入少量清(qīng )水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
