做法:春(chūn )笋(sǔn )切成片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入(rù )生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水半(bàn )掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加(jiā )入盐(yán ),翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖(mèn )。
