做法:春笋(sǔn )切成(chéng )片后加少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬(áo )干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖焖。
