做法:春笋切成片(piàn )后加少许盐(yán )捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生姜(jiāng )、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅(guō )盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
