做法(fǎ ):春笋切成片后加少许盐捞出(chū )后(hòu )用清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半掩(yǎn )住春(chūn )笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时(shí )盖上锅盖(gài )焖。
