做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
