做法:春笋切成片后加少许(xǔ )盐捞出后用(yòng )清水浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖。
