做法:春笋切成(chéng )片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入(rù )少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火(huǒ )。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
