做法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛(niú )肉片(piàn )、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加(jiā )入少(shǎo )量(liàng )清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
