做法:春笋切成片后(hòu )加少许盐捞(lāo )出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量(liàng )清(qīng )水半掩住春笋(sǔn ),盖上锅盖大(dà )火(huǒ )煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候(hòu )加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
