做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均(jun1 )匀稍收汁时盖(gài )上锅盖焖。
