做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加入少量(liàng )清(qīng )水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
