做法:春笋切成片后加少(shǎo )许(xǔ )盐(yán )捞出后(hòu )用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右(yòu )。再加入(rù )生(shēng )抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖焖。
