做(zuò )法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻(fān )炒均匀(yún )稍(shāo )收(shōu )汁时盖(gài )上(shàng )锅盖焖。
