做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中(zhōng )火(huǒ )。煮到水快(kuài )熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
