做法:春笋切(qiē )成片(piàn )后加(jiā )少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右(yòu )。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖焖。
