做(zuò )法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加(jiā )入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖(gài )焖。
