做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入(rù )少量(liàng )清水(shuǐ )半掩住春(chūn )笋(sǔn ),盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
