做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
