做法(fǎ ):春笋切成(chéng )片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜(jiāng )切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
