做法:春笋切(qiē )成片后加少许盐捞(lāo )出后用清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段(duàn )翻炒1分钟左右。再(zài )加入生(shēng )抽、老(lǎo )抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀(yún )稍(shāo )收汁时盖上锅盖(gài )焖。
