做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入(rù )生(shēng )姜(jiāng )、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮到(dào )水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
