做法:春(chūn )笋切成片后(hòu )加(jiā )少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的时候加入(rù )盐(yán ),翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
