做法(fǎ ):春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜(jiāng )、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖(gài )大(dà )火煮开后转中火。煮到水快熬(áo )干的(de )时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖。
