做法:春笋切成片后加少许(xǔ )盐捞出(chū )后(hòu )用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱(cōng )段翻(fān )炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
