做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老(lǎo )抽(chōu )、蚝油翻炒(chǎo )均(jun1 )匀,加入(rù )少量清水半(bàn )掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖焖。
