做法:春笋(sǔn )切成(chéng )片后加少许盐(yán )捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬(áo )干的时(shí )候(hòu )加(jiā )入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅盖(gài )焖(mèn )。
