做(zuò )法:春笋(sǔn )切成片后加(jiā )少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅(guō )盖大(dà )火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时(shí )盖(gài )上锅(guō )盖焖(mèn )。
