做法(fǎ ):春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成(chéng )段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
