做(zuò )法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀(yún ),加入少(shǎo )量(liàng )清水(shuǐ )半掩住(zhù )春笋,盖(gài )上锅(guō )盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
