做(zuò )法:春笋切成(chéng )片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮(zhǔ )到(dào )水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
