做法:春笋切(qiē )成(chéng )片后加(jiā )少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半(bàn )掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收(shōu )汁时盖上(shàng )锅盖(gài )焖。
