做法:春笋切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧(shāo )热(rè ),倒(dǎo )入(rù )2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大(dà )火煮开(kāi )后转中火。煮(zhǔ )到水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
