做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量(liàng )清水半掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后(hòu )转中(zhōng )火。煮到水快熬(áo )干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
