做(zuò )法:春笋切成片后(hòu )加(jiā )少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春(chūn )笋、牛肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右。再(zài )加入生抽、老(lǎo )抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
