做法:春笋切成片后加少许(xǔ )盐捞(lāo )出(chū )后用清水浸泡,生姜切(qiē )片(piàn ),葱切(qiē )成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
