做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜(jiāng )切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加(jiā )入(rù )少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快(kuài )熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
