做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱(cōng )段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽(chōu )、蚝油翻(fān )炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐(yán ),翻炒(chǎo )均匀稍(shāo )收汁时盖上锅盖焖。
