做法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清(qīng )水(shuǐ )浸(jìn )泡(pào ),生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收(shōu )汁时(shí )盖上锅(guō )盖焖。
