做法:春笋切成片(piàn )后加少许盐捞出后(hòu )用清(qīng )水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分(fèn )钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮(zhǔ )到(dào )水快熬(áo )干的时候(hòu )加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖(mèn )。
